Just in time for Valentines Day: Red Velvet Pancakes!

If you like cake for breakfast then this recipe is for you! I've been in search of the perfect red velvet pancakes for weeks now! While in Vegas last month, I saw a poster with a mile high stack under the headline "Don't Wait Until Dessert to Indulge." Genius. Two weeks later while in Sedona I saw red velvet pancakes on the menu and clapped in delight! 

Beautiful! However one bite in I felt duped. Turns out they were made from beet juice and they straight up tasted like beets. But I wanted cake for breakfast! And so I came across this recipe and it was a hit! Tried and true. If I can make it, you can too!

5 ingredients. 20 minutes (5 min prep + 15 cook time). I literally had pancakes for days. It was a very happy week!

INGREDIENTS

- 1 box of Red Velvet cake mix (I went with Betty Crocker)

- 2.5 cups of milk (I used soy milk)

- 1/2 cup flour

- 1/4 cup oil

- 2 eggs

(This made about 20 medium sized pancakes! Pancakes for days indeed!)

The recipe is pretty straightforward:

1) Add all the ingredients into a big bowl and mix until batter is smooth

2) Heat a griddle to low heat (recipe says medium high heat but I tried that and burned some)

3) Spray griddle with cooking spray so that pancakes flip easily (even better if you use a non-stick pan)

4) Scoop a ladle of batter onto the pan and cook until top of the batter starts to bubble

5) Flip the pancake over for another minute until it's cooked all the way through (I burned the first few so really keep an eye on it!)

AND VOILA! CAKE FOR BREAKFAST!

For an added touch, top with whipped cream made from scratch: 2 tablespoons sugar & 1/2 cup whipping cream. Add together and whip until cream reaches stiff peaks. Or you can cheat like I did and use a magic bullet: blend for 15 seconds, shake and blend again. Super easy, super yummo!

I even tried making heart-shaped pancakes...

I think I still need to work on my methods...there isn't an after picture for a reason but once I got a few out of the way we were rockin and rollin! These will be making a comeback this Valentines Day weekend :)
